Tuesday, March 19th: Chicken or Salmon Piccata over Noodles or Zoodles

Chicken or Salmon Piccata served over Egg Noodles or Zoodles with Veggies (tbd) and Great Harvest Dinner Rolls.

Seared and Roasted Chicken Breast or Salmon Piccata over Egg Noodles or Zucchini Noodles served with Roasted Veggies.  Piccata sauce is made with white wine, lemon juice and slices, chicken stock, capers, butter and flour, salt and pepper, parsley. Chicken is coated with flour, parmesan cheese and seasonings; Salmon is coated with a house rub containing chili powder, paprika, brown sugar, salt and pepper and sliced lemons.
