Chimichurri Pork or Flank Steak with Roasted Sweet Potatoes and a Tomato, Corn and Cucumber Salad with Basil tossed with a Lime Vinaigrette.

Ingredients:  Flank Steak (marinated in a house marinade) or Pork Tenderloin (house rub of paprika, salt and pepper on pork), Chimichurri sauce includes Cilantro, Parsley, Lime Juice, Olive Oil, Red Pepper Flakes, Salt, Pepper; Sweet Potatoes or Baby Red Potatoes Roasted with Olive Oil, Chili Powder, Paprika, Salt and Pepper; Tomato, Corn and Cucumber Salad tossed with a Lime Vinaigrette.
